2 lamb racks
6 cloves of black garlic
4 tbsp balsamic vinegar
4 tbsp olive oil
2 tbsp honey
1 tsp rosemary salt
1/2 tsp smoked paprika powder
Lamb racks with black garlic marinade
Remove the lamb racks from the packaging and pat dry with kitchen paper.
Remove the skins from the black garlic cloves. Put the black garlic cloves together with the balsamic vinegar, olive oil, honey, rosemary salt and smoked paprika in a blender. Mix everything well together to form a marinade.
Rub the racks of lamb all over with the marinade and cover with foil. Put them in the refrigerator and let the lamb racks marinate for at least 4 hours.
Remove the lamb racks from the refrigerator an hour before cooking and allow them to come to room temperature. Preheat the oven to 200˚C. Put a drizzle of olive oil in a large pan and roast the lamb racks over high heat on both sides until golden brown.
Then put the lamb racks in an oven dish and place in the oven. For medium rare, keep about 10-15 minutes. Remove the lamb racks from the oven and cover with aluminum foil and let them rest for a few minutes.
