Black corn Chicha Morada
Chicha Morada, a refreshing sweet-tart Peruvian drink and gets its gorgeous hue from black Morada corn. It's the most traditional family-friendly beverage of Peru. Garnished with chunks of apple and spiced with cinnamon and cloves, this is the perfect summer drink!
500g black corn (Morada)
3 green apples
1 tbsp. cloves
5 cinnamon sticks
1 cup sugar
Add 2 liters of water to a large cooking pan, add the Morada corn and bring to a boil.
Reduce to a simmer.
Add the peel of the pineapple, 2 apples cut in quarters, cloves and cinnamon sticks.
Cover, cook for 45 minutes over medium heat.
Strain and discard the solids.
Add more water to taste and boil again for 45 minutes.
Dissolve the sugar.
Allow to cool and refrigerate.
This drink can last up to 4 days refrigerated, as long as you don't add the limequat juice.
Serve with ice, add limequat juice to taste, decorate with diced apple and a slice of limequat.
