Pitahaya Spoom

Serving a spoom between different courses to neutralize your taste, can really upgrade your dinner. But serving a spoom because it's simply delicious and refreshing is also a good reason! We made a spoom of red pitahaya and that makes this spoom extra fancy! Have you ever seen such bright pink icecream?

Ingredients for 10 drinks
1 bottle of Cava or other sparkling wine
4 red pitahaya
20g mint
1 lime, squeezed
2 tbsp. sugar

1. Mix the flesh of the pitahaya, the mint, sugar and the lime juice in a blender. Hold back some mint leaves for decoration.
2. Pour the mixture into a not too deep container and place it in the freezer.
3. Stir the mixture every half an hour with a fork, just as long as sorbet ice cream is formed. This will take several hours.
4. Scoop some pitahaya sorbet ice in each glass, add a layer of Cava and decorate with mint.
