A festive blini-platter

From Russia with love: blinis! These fluffy mini 'pancakes' are delicious when combined with ingredients such as fish, seafood and cheese. This week we made a 'blini-platter' with all kinds of delicious toppings. Fancy products such as citruscaviar (fingerlimes), fresh wasabi and edible flowers take this platter to a higher level!

Approx. 30 Blinis
100g Smoked salmon
100g Gorgonzola
80g Cocktail shrimp
80g Tapas shrimp
1 Wasabi root
3 tbsp. mayonnaise
50g Edamame, cooked and peeled
3 Fingerlimes
20g Walnuts, finely chopped
1 Yuzu, juice squeezed
3 tbsp. Mustard
Crazy Pea
20g Wasabi nuts, coarsely chopped

1. Grate the wasabi root with a special wasabi grater. Add to the mayonnaise to taste and set the rest aside.
2. Mix the juice of the Yuzu to taste with 3 tbsp. mustard.
3. Prepare a nice, large platter with all of the ingredients and your blini platter is ready!
