Ponthier fruitmousse cake

This velvety soft and fruity cake is baked by Judith. Sophia Loren once said: 'Good food is a celebration of life'. Judith wholeheartedly agrees with her. Celebrate life with this delicious Ponthier fruitmousse cake! 

Judiths baking

 

Crust
40g pistachio nuts
40g pecans
70g sugar
1 egg
50g flour

Preheat the oven to 175°C.
Finely chop the nuts in a food processor.
Put the egg and sugar in a bowl and mix until the volume has tripled.
Add the nut mixture to the egg mixture and add the flour while mixing.
Pour the mixture into a baking mould and bake the crust for 20 minutes until done.

Mango mousse
200g whipped cream
200g Ponthier mango puree
3 sheets of gelatin

Whip the cream until firm.
Soak the gelatin for 10 minutes in cold water and then dissolve in three tablespoons of hot water. Add to the mango puree.
Mix the whipped cream and mango puree.
Pour the mango mousse onto the cooled nut base and let it set in the fridge for 30 minutes.

Raspberry mousse
200g whipped cream
200g Ponthier raspberry puree
3 sheets of gelatin

Whip the cream until firm.
Soak the gelatin for 10 minutes in cold water and then dissolve in three tablespoons of hot water. Add to the raspberry puree.
Mix the whipped cream and the raspberry puree.
Pour the raspberry mousse onto the stiffened mango mousse and let it set in the fridge for 30 minutes

Passionfruit topping
200g Ponthier passionfruit puree
3 sheets of gelatin

Soak the gelatin for 10 minutes in cold water and then dissolve in three tablespoons of hot water. Add to the passionfruit puree.
Pour this mixture over the stiffened raspberry mousse and put the cake back in the fridge.

For a good result, leave the cake to set in the fridge for 6 hours.
Decorate the cake with slices of mango or raspberries.
