Ollucos are used in various Peruvian dishes and mainly eaten cooked, mashed or baked; similar to a potato. But it can also be eaten raw. Olluco is orange, green pink or yellow in color with bright pink spots on the outside and has a crisp texture, which remains even when cooked.
10 hotdog sandwiches
Juice of 3 limes
2 red onion (finely chopped)
2 aji amarillo chillies (finely chopped)
Seeds of 1 pomegranate
10g coriander (finely chopped)
4 different colored ollucos (cut into thin slices)
Heat or bake the hot dogs.
Mix the red onion with the aji amarillo, pomegranate seeds, coriander and half of the lime juice. Season with salt and pepper. Stir well and set aside.
Mix the mayonnaise with the rest of the lime juice.
Serve the hot dogs on the sandwiches and garnish with the salsa, olluco and lime mayonnaise.
