Salsify are a real delicacy! For years salsify was considered as a forgotten vegetable. But nowadays this “poor people asparagus” is making its way back on the menu of many restaurants. Salsify are elongated dark roots and a soft white inside.
Salsify is imported from the Mediterranean Sea area to Belgium and the Netherlands.
How to store
Store salsify in a cool (12 to 15 ° Celsius) and dry place. In these conditions you can keep salsify for a few weeks.
How to eat
Rinse the salsify thoroughly (wear gloves if necessary). Peel with a vegetable peeler and cut the base and top off. Then brush them thoroughly and let them boil for about 15 minutes.
