The St. George’s Mushroom, also known as the St. George, has a thick, round stem with a convex cap and slightly wavy edges. It is a fleshy mushroom with a white to cream color. Narrow spores are hidden under the cap, creating a beautiful pattern. This mushroom is only seen in spring. The taste is subtle yet tangy, and the smell is reminiscent of cucumber. Quite unique!

How to store

St. George’s mushrooms can be stored in the refrigerator for several days. Use them as fresh as possible for the best flavor.

How to eat

Before using, brush the mushrooms clean, trim a bit off the bottom of the stem, and chop them small. Incorporate the mushrooms into a creamy risotto or pasta sauce, or briefly sauté them in some oil with garlic and herbs, then serve them alongside a delightful green salad topped with some Parmesan cheese as garnish.
