Tombong coconuts are a rare delicacy in Indonesia, where it originates. When a coconut falls to the ground and begins to sprout, the coconut water slowly transforms into soft, spongy ball which they call the Tombong coconut. This spongy ball absorbs the coconut water and grows slowly bigger until it fills the entire hollow core from the coconut. Tombong coconuts contain all the nutrients needed to grow a new coconut palm.

How to store

Store Tombong coconuts in an airtight container, preferably in the refrigerator. For the best flavor and texture, consume it within a few days.

How to eat

Tap around the hard shell using the blunt side of a large knife until a crack forms. Turn the coconut and repeat until the nut splits open. Pull the two halves apart and gently remove the white, spongy ball with your hands or by using a spoon.
