Okra skewers

12 okra

2 tbsp. olive oil

Skewers

Lime salt

1 tbsp. seasalt

1 tsp. lime zest (finely grated)

1/2 tsp. sugar

Miso sauce

3 tbsp. miso

2 tbsp. sesame oil

1 tbsp. white wine or rice vinegar

Juice of half an orange

1/2 tbsp. soy sauce

1/2 tbsp. honey

1 tsp. ginger syrup

2 tbsp. roasted sesame seeds

Grilled okra skewers

If you use wooden skewers, let them soak in water first so they don’t burn when you grill them.

Mix the seasalt, limezest and sugar in a small bowl.

Mix the ingredients for the miso sauce in a bowl until it gets smooth. Keep one teaspoon roasted sesame seeds aside to garnish.

Wash the okra and remove the stems. Put the okra onto the skewers. Heat up a grill pan or barbecue over medium heat. Sprinkle some olive oil over the okra. Then grill the okra skewers on both sides for about 3 minutes till they are lightly blistered and cooked through. Make sure the okra stays crispy.

Sprinkle the skewers with lime salt and sesame seeds to taste.

Dip in the miso sauce and enjoy!
