Ataulfo Granita
Ataulfo mangoes are naturally sweet, so you can omit sugar in this recipe.
Place the mango chunks and mint in a blender and blend until smooth. Pour the mixture into a shallow, freezer-safe container and freeze for about 4 hours. Stir well with a fork every hour to break up the granita and prevent large ice crystals from forming.
Scoop the granita into pretty bowls or glasses and garnish with grated coconut and mint leaves.
