How to store

You can store a ripe pitahaya in the fridge for a couple of days, but it’s best to eat it as soon as possible. An unripe pitahaya can be left at room temperature to ripen.

How to eat

Scoop the flesh out of the skin with a spoon. Then cut the decorative flesh into cubes or slices. Or use a melon ball spoon to make cute little balls. Of course, you can also eat the flesh right out of the skin, as you would a kiwi.
