Red pitahaya
This beautiful, scaly cactus fruit is one of the brothers pitahaya; also called dragon fruit or dragon fruit. The inside of this pitahaya consists of bright pink-red, slightly sweet and aromatic flesh. The seeds provide a nice, crunchy bite, similar to a kiwi.

How to store
A ripe, pitahaya can be kept in the refrigerator for several days, but it is best to eat them as soon as possible. An unripe pitahaya can be left to ripen at room temperature.
How to use
Scoop out the flesh from the skin with a spoon. Then cut the decorative flesh into cubes or slices. Or use a melon ball scoop to make nice little balls. Of course, you can also scoop out the pulp as you would a kiwi.
