Sour mango

Sour mangoes are eaten when they are not yet fully ripe. Instead of being sweet and soft, they are firm in texture and have a fresh, slightly tangy flavor. They add a refreshing kick to dishes and work well as a contrast to rich, spicy, or savory flavors. The taste is somewhat similar to a combination of green apple and citrus.

How to store

Store sour mango at room temperature to keep it fresh, or in the refrigerator to slow down the ripening process.

How to eat

Instead of waiting for the mango to fully ripen, sour mango is often eaten fresh, sliced, and served with a mix of chili, sugar, and salt. Its crisp bite and mild acidity also make it a popular ingredient in salads and light dishes, such as yam mamuang (Thai mango salad).
