Cocktailshaker:
3 ripe fresh guava (± 200–250 g total)
100 ml rum
1 lime, squeezed out
30 ml sugar syrup
1 egg white
Pinch of Tajín
Ice cubes


Garnish:
Slice of guava or lime
fresh mint
Tajín + lime for rim

Guava Rum Sour

Prepare the guava puree:
Slice the guavas in half and scoop out the soft flesh with seeds. Blend until smooth using a hand blender. Press the mixter through a fine sieve to remove the seeds, leaving you with a silky guava puree.

Cut the lime in half and squeeze out the juice. Add the guava puree, lime juice, rum, simple syrup, egg white and a pinch of Tajín to a shaker. Dry shake (without ice) for about 15 seconds.

Then add a handful of ice cubes and shake again vigorously until well-chilled.

Prep the glasses:
Run a lime wedge along the rim of your glass and dip it into Tajín for that spicy, zesty edge.

Fill the glasses with ice cubes and strain the cocktail into the prepared glasses. Garnish with a slice of guava or lime and a sprig of fresh mint.
