Dressing:
1 ripe horned melon, seeds and juice
1 lime, squeezed out
2 tbsp olive oil
1 tbsp honey
a pinch of salt
Salad:
1/2 watermelon, sliced in cubes or balls
feta, sliced in cubes or crumbled
pomegranate seeds
pistachios, finely chopped
mint leaves, chopped or torn
basil leaves, chopped or torn

Dressing:
Cut the horned melon in half and scoop the juicy, seedy pulp into a small bowl. Slice the lime in half and squeeze both halves over the bowl with the horned melon. Add the olive oil, honey, and a pinch of salt, then stir everything together well. Set aside.
Salade:
Cut the watermelon in half and make cubes or melon balls from the flesh. Spread them out in a salad bowl and crumble the feta on top. Add the basil and mint leaves. Drizzle the horned melon–lime dressing over the salad and finish with pomegranate seeds and chopped pistachios.

Horned melon
Horned melon, also known as kiwano, is an exotic relative of cucumber and melon. Its spiky skin not only gives it a striking appearance but also explains its name. Inside this eye-catching fruit are small chambers filled with jelly-like green seeds. These are edible and offer a surprisingly fresh, tangy flavour.
