400ml coconut milk (cooled)
2 tbsp. powdered sugar
1 tsp. vanilla-extract
Zest and juice of 1 lime
Mint leaves (finely chopped)
2 tsp. grated coconut
12 mini ready-made tartelette bases

Start by making the coconut cream. Mix the cooled coconut milk on high speed until stiff peaks form. Add the powdered sugar, vanilla extract, mint leaves, lime zest and 1 tbsp lime juice. Continue mixing until everything is well mixed.
Fill each mini tartelette with a spoonful of whipped coconut cream. Garnish with the mint leaves, mini meringues, coconut grater and lime slices.
