300g precooked corn flour

450ml water

1 tsp. salt

Olive oil

Salsa

1 Readylicious® mango (in cubes)

1 Ugli (in cubes)

1 Jalapeño chilli (finely chopped)

10 gr coriander (finely chopped)

Juice of 1 lime

Pulled chicken

BBQ sauce

400g chicken thigh

1.5l chicken broth

Ugli Arepas

Mix all ingredients for the salsa and season with salt and pepper.

Knead the pre-cooked corn flour with the water and salt with your hands into a smooth dough. Divide the dough into 8 equal pieces and roll into balls and then shape them into flat rolls with wet hands. Heat a frying pan with a layer of oil and fry the buns on both sides for 10 minutes.

Place the chicken breasts in a medium saucepan and cover with the stock. Cook with a lid covered for about 10 minutes until tender. Drain and drain. Pull the chicken breasts apart with two forks. Add the barbecue sauce to the chicken fillet and heat briefly in a frying pan with some oil.

Cut the arepas open and stuff with the salsa and pulled chicken.

You can probably guess why this fruit is called Ugli… It does not look very appetizing with its green-yellow, puckered and wrinkled skin. But “don’t judge a book by its cover”. The Jamaican citrus fruit is a very flavorful, sweet citrus fruit. A combination of mandarin, grapefruit and orange.
