Ingredients:
2 tbsp olive oil
1 onion, cut into halved rings
3 cloves of garlic, coarsely chopped
1 slightly unripe jackfruit
1 tbsp cumin
1 tbsp chili flakes
1 tbsp smoked paprika
1/2 tbsp cayenne pepper
500 ml vegetable stock
125 ml barbecue sauce
mini burger buns
Iceberg lettuce
Red cabbage sprouts
Jackfruit burgers
Preheat the oven to 180°C.
Coat a large knife with oil and cut the jackfruit in half and then in quarters. Carefully remove the kernel from the jackfruit by cutting it diagonally. Remove each fruit and remove the seeds. Rinse the fruit thoroughly.
Heat oil over medium heat in a large pan. Add the onions and garlic and cook until they are translucent. Add the jackfruit and spices. Stir well to cover everything.
Add the vegetable stock and simmer. Lower the heat, cover and simmer for 45 minutes, until the stock is largely absorbed and the fruit is completely soft. Spread the jackfruit mixture on a baking tray lined with aluminium foil and bake in the over for 45 minutes, until the jackfruit is well fried and has a deeper brown colour. Pour the barbecue sauce over the jackfruit, mix and put back in the oven for 15 minutes.
Serve on warm mini burger buns and garnish with some iceberg lettuce and red cabbage sprouts.
