Ingredients:
10 mini buns
1/2 block of tahu, cut into strips
1 onion, thinly sliced into rings
1 (purple haze) carrot, thinly sliced
1 garlic clove, crushed
30 ml soy sauce
2 tbsp sugar
1 canned pineapple chunks in juice
1 tbsp cornstarch
Sunflower oil
Cashew nuts, roughly chopped
1 spring onion, finely sliced
Flavour-packed bun with tahu
Heat sunflower oil over medium-high heat and fry the tahu strips until golden brown and crispy, about 8 minutes. Remove the tahu from the pan and set aside.
In the same pan, cook the onion with a pinch of salt over medium heat until translucent. Add the garlic and carrot and cook for 3-5 minutes, until softened and almost tender.
Mix the pineapple juice (from the can) with the sugar, soy sauce, and cornstarch. Stir until the sugar and cornstarch have dissolved and season with pepper to taste. Keep the pineapple pieces separate.
Add the sauce to the pan and bring to a boil. Keep stirring until the sauce thickens well. Finally, add the pineapple pieces and tahu strips ans heat everything through briefly.
Fill the mini buns with the tahu-pineapple mixture and garnish with the roughly chopped cashew nuts and sliced spring onion.
