2 ripe Ataulfo mangoes (peeled and pitted)
10g fresh mint leaves

Grated coconut
Mint leaves

Ataulfo Granita

Ataulfo mangoes are naturally sweet, so you can omit sugar in this recipe.

Place the mango chunks and mint in a blender and blend until smooth. Pour the mixture into a shallow, freezer-safe container and freeze for about 4 hours. Stir well with a fork every hour to break up the granita and prevent large ice crystals from forming.

Scoop the granita into pretty bowls or glasses and garnish with grated coconut and mint leaves.

Ataulfo mango

Ataulfo mangoes are known for their intense sweetness, pronounced aroma and especially for their buttery, almost fibre-free structure. They are somewhat smaller in size than normal mangoes and the color is golden yellow.

Mint is a well-known herb that is popular due to its menthol flavour and wonderful scent. For example, mint is often used to make mint tea and is widely used in desserts. It also tastes delicious in all kinds of oriental, savoury dishes.
