400 gr marinated vegetables, Sud’n’Sol (finely chopped)

16 not too small new potatoes

Fresh herb mix (basil, chervil, dill, parsley, …)

Sea salt and black pepper from the mill

Splash of white wine vinegar

Potato Bruschetta with vegetables

Baby potatoes:

Wash the baby potatoes.

Boil the baby potatoes without peeling in water and salt.

Drain.

Then place on an oven tray and bake in a 230 °C oven for 10 minutes.

Then cut each potato in half and place in a circle on each plate.

Now put a spoonful of bruschetta on each half of the potato.

Herb salad:

Season the fresh herb mix with a little sea salt and white wine vinegar.

Finish:

Place some herb salad on each plate.

Finish with some black pepper.

TIP. You can serve fried chicken, veal and fish.
