Fermenting is HOT!
White garlic bulbs, yellow onions and limes are placed in the oven for 3 weeks and fermented through a carefully controlled heating process. Due to this fermentation process, the sugars and amino acids form melanoidin, which makes the products black and soft. The heating process releases more healthy antioxidants. Its soft, jelly-like texture and rich taste make it great to eat as an ingredient or simply as a healthy snack.

Meet black garlic’s sister, black onion. For this, yellow onions are placed in ovens for weeks. The result is a black, fermented onion bursting with healthy properties. Unique and soft in taste, creamy in texture. The taste is best described as: subtle hints of soy, balsamic and raisins. This makes black onion a delicious delicacy.

Black garlic
Gazpacho with black onion
Ingredients:
3 tomatoes
½ cucumber
½ black onion
1 clove of garlic
1 slice of bread
100ml water
Salt and pepper to taste
dried oregano
1 tbsp olive oil
5 ice cubes
Preperation:
Place all ingredients in a blender and blend until smooth.
Garnish with some diced cucumber, tomato, fresh and/or dried herbs and black pepper.
Serve and enjoy!
