Ingredients:
200g “Kruidnoten” (typical Dutch spiced cookies)
250g mascarpone
Juice of 1 Meyer lemon
Zest of 1 Meyer lemon
4 tbsp powdered sugar
Marrow of 1 vanilla pod
Handful peeled, unsalted pistachio nuts

“Kruidnoot” burgers

Mix the mascarpone, Meyer juice and zest, powdered sugar, marrow of a vanilla pod until smooth and creamy. Set aside.

Blend a handful of peeled pistachios into a fine crumble. Blend for a shorter time if you prefer more texture. Pour the ground pistachios onto a plate of small bowl.

Spoon a little of the mascarpone mixture onto the flat side of the “kruidnoot” and place a second “kruidnoot” on top. Roll the “kruidnoot” burger through the pistachio crumble so it gets a nice green coating all around. Place on a serving plate and repeat until the mascarpone mixture is all used or you’ve made the desired amount. Enjoy this festive little treat!

Meyer lemon
